Our breads are handmade, stone oven-baked sourdough that come from an effort to create a healthier alternative to the conventional, mass-produced breads available, and use a mature starter to produce lofty and richly flavored naturally leavened breads.
Naturally leavened sourdough breads have been made for centuries using only three ingredients: flour, salt, and water. We follow these same principles that allow our breads to transform through a long fermentation process, bulk fermenting at regulated temperatures, then undergoing a long cold 12-36 hour retard which slows the proofing of the dough to allow for maximum development of deep flavors, creating many more benefits than just great flavor.
The potential health benefits that naturally leavened sourdough breads can offer, primarily due to its unique fermentation process, are substantial.
Sourdough, being naturally fermented using wild yeast and lactic bacteria, is beneficial for functioning as probiotics, promoting a healthy balance of gut microbiota which contributes to better digestion and immune function.
The long fermentation process involved in making sourdough results in the breakdown of complex carbohydrates, gluten, and phytic acid, making it serve as food for beneficial bacteria in the gut and easier to digest compared to other commercially mass-produced breads. This can be good for individuals with mild gluten sensitivities.
Typically having a lower glycemic index than conventional bread, sourdough can help slow digestion and absorption of sugars, helping to maintain a more stable blood sugar
Our handmade breads, from start to finish stone oven baking, are a minimum 72-hour process which must be constantly monitored, nurtured, coaxed, and cared for as they are dependent on many factors which all must align in order to create the perfect loaf. Temperature, humidity, time, types and ratios of heritage and heirloom flours, as well as our ability to create, proof, shape, bake, cool and deliver all play a part in what we believe is an incredible product. A product that maintains that patience pays off, cannot be rushed and that you will appreciate the complexity and enjoy the end result.
BlueRabbit Bakehouse is a Louisiana Cottage Food producer. None of our items are produced in a licensed or regulated facility. We are strictly home produced and processed. Our products are created in a facility that contains nuts, seeds and dairy.

These breads are baked in the style of traditional Irish simple loafs. They are soft textured and designed for durability, however they are often enjoyed quickly. Scaled at approximately 660 grams, they are perfect for a small family or personal consumption.

All our nut butters are ground in house from whole seed, nut or nib in our custom Melanger with granite-on-granite stones for a minimum of 12 hours to create the creamy, smooth butters we enjoy and know you will as well. All butters sold in 12oz jars. To thicken refrigerate.
